If you want to enjoy a traditional Bihari dish at home, Litti Chokha is the perfect option. This recipe is simple and comes with easy steps. Litti looks like Rajasthani Batti but is filled with sattu or roasted black gram flour. The chokha is made with brinjal, tomato, garlic, mustard oil and spices. Loved in Bihar and Jharkhand, this dish is also famous across North India.

Ingredients Used in Litti

The main ingredients include whole wheat flour for the dough, sattu for the filling, and brinjal for the chokha. Garlic, lemon juice, coriander leaves, green chilli, pickle masala, mustard oil, nigella seeds and ginger add the authentic taste. Tomato is roasted along with brinjal for chokha, while melted ghee gives the final touch.

Preparation of Dough and Filling

The dough is prepared with wheat flour, mustard oil and a pinch of salt. Water is added to make it soft. For the filling, sattu is mixed with pickle masala, mustard oil, lemon juice, kalonji, ginger, coriander, green chillies and salt. This mixture is stuffed into small dough balls and rolled evenly.

Baking the Litti

The stuffed dough balls are placed on a baking tray and cooked at 180 degrees Celsius. They are flipped to ensure even baking on both sides. For a crisp outer layer, the oven is set on broil mode for a few minutes. This makes the litti crunchy from outside and soft from inside.

Making the Chokha

To prepare chokha, brinjal and tomatoes are roasted until soft. The skin is peeled, and the pulp is mashed well. Garlic, mustard oil, lemon juice, green chilli, coriander leaves and salt are mixed in. This mixture forms the smoky and tangy chokha that pairs perfectly with litti.

Serving Style

The baked litti balls are dipped in melted ghee before serving. This adds aroma and richness. Litti is always served hot with chokha, but many people also enjoy it with mutton curry, chicken curry or kadhi. The combination makes it a complete meal.

Variations You Can Try

Although brinjal is the key vegetable in chokha, you can also make it with only tomato or potato. Some people like adding extra masala for stronger flavors. Traditionally, litti was roasted on hot charcoal, but you can prepare it in an oven, tandoor or even on a tawa.
