Take one cup of besan, a quarter cup of ghee, eight powdered cardamoms, half a cup of jaggery powder, and one-third cup of water. Add chopped almonds and cashews for crunch. Start by melting the jaggery with water in a pan until sticky. In another pan, roast the besan on low flame, then add ghee. Once golden and creamy, mix in the jaggery syrup and stir well. Transfer to a tray, sprinkle nuts, and cut into squares after cooling.
Sugarless Kaju Katli
Kaju Katli is a Diwali favorite, and this sugar-free version makes it even better. Use two cups of cashews, one tablespoon of ghee, and two tablespoons of raw honey. Roast the cashews at 180°C for five minutes and let them cool. Grind them with ghee until a butter-like texture forms. Add raw honey and blend again until it becomes a soft ball. Flatten it on a plate and cut into diamond shapes. This treat offers the same authentic taste without refined sugar.
