Ingredients Required

  • Full cream milk – 1 liter
  • Basmati rice – 2 tablespoons
  • Sugar – 4 to 5 tablespoons (adjust to taste)
  • Saffron strands – 10 to 12
  • Green cardamom powder – ½ teaspoon
  • Rose water – 1 teaspoon
  • Almonds – 1 tablespoon (thinly sliced)
  • Pistachios – 1 tablespoon (chopped)

Preparation Method

Start by washing the basmati rice thoroughly and soaking it in water for about 30 minutes. Drain the water and grind the rice into a fine paste using a little milk. Make sure the paste is smooth and free from lumps.

Heat milk in a heavy-bottom pan and bring it to a boil. Lower the flame and let the milk simmer for a few minutes while stirring occasionally to prevent sticking. Add the rice paste slowly while continuously stirring to avoid lumps. Cook the mixture on low heat until it thickens and the raw smell of rice disappears.

Add sugar and mix well until fully dissolved. Soak saffron strands in warm milk and add it to the phirni along with cardamom powder. Stir gently and cook for a few more minutes until the dessert reaches a creamy consistency.

Turn off the heat and add rose water for fragrance. Mix well and allow the phirni to cool down. Pour it into serving bowls and garnish with almonds and pistachios. Refrigerate for at least 2 to 3 hours before serving.
