Avial is a very famous vegetable made in Kerala. It includes a lot of vegetables, which are mixed with coconut paste and curd. Coconut enhances the taste of the vegetable. Today we are going to tell you about his recipe.


1 raw

1 carrot

5-6 green beans

4.5 Kundru

1/2 cup water

1/4 tsp turmeric

1/2 red chili powder

1 tsp cumin

1 bunch curry leaves

3 tsp coconut oil

salt to taste

Method – Wash all the vegetables and cut them into half inch pieces. Make a fine paste by mixing coconut, green chili, half a teaspoon cumin and water together. Now heat 2 tsp oil in a large vessel. Add half a teaspoon of cumin seeds to it. Then add banana pieces and cook for 2 minutes. Now add all the remaining vegetables and sprinkle salt on top. Then cover it and cook on medium heat till the vegetables are half cooked. Then add turmeric and red chili powder. Now cover it and cook again for 3-4 minutes. Now add coconut paste and stir with light hands so that the vegetables do not break. Now cover the vessel and take it off the flame after 5 minutes. Finally add curry leaves and 1 teaspoon coconut oil to it. Cover the lid and keep it to cool down. When the vegetable cools down, add some curd to it and serve.
